I’ve been working on stocking the shelves for winter. Putting away the garden produce.
These are just 3 of my top recipes that I put in the pantry every year. there are more to come, but we can start here! Let me know what you think. These recipes are tried and true, you have to try them!!!!

Roasted Tomatillo Salsa Verde; this is a recipe that I just got from a great friend, I never knew what to do with Tomatillos. They had an odd taste to me, and I just didn’t bother with them. Once I tried this, I immediately added this to the top of my fall canning list! This is to die for! The most important key to me though, is to Fire Roast All the veggies. I use my brick BBQ with Alder/Oak/Maple. It say’s to oven roast, but if you want all the flavor, you have to get some wood to roast over. Even some charcoal briquets would be a start, add some wood chips or lump charcoal and it would go a long way to imparting some flavor. A must try if your a serious canner!!!

Virginia Chunk Sweet Pickles; this is a tried and true recipe from my Grandma Mahon. I love a jar of these at the holiday’s. The process takes time, but isn’t hard. I just put them in a stainless pot in my fridge and do the process to them as to the recipe each day. Im not a big sweet pickle fan, but these are really nice. My biggest thing with these, is I like the smallest cucumbers I can get. I like firm chunks, I don’t like having soft centers with seeds in these.

Christmas Zucchini Relish; another of Grandma Mahon’s. I love this all year long. Burger’s and Dog’s, this is a must have in your refrigerator door! My dad can’t have a hot dog without it.
